Our final experimental releases from the 2025 harvest. Wildcard brings together four small trial batches, each defined by a distinct fermentation: Mosto, Bioreactor, Hops and Kombucha. Each bag is packed at random. You’ll receive one of the four processes. These were small-scale trials from last harvest, now being refined and scaled as our 2026 harvest begins.

This release is bright, expressive and intentionally unpredictable. Expect fruit-driven sweetness, lifted aromatics, florals, layered fermentation character and the occasional wild edge. Processes include:

Mosto - Fermented using the juice released by coffee cherries, rich in natural microbes and yeasts.

Bioreactor - Extended, controlled fermentation in a sealed tank, with circulating mucilage to build depth and structure.

Hops - A non-alcoholic co-fermentation with hops, creating a distinctly aromatic profile.

Kombucha - Fermented with SCOBY, using bacteria and yeast to transform the coffee’s natural sugars.

Store in an airtight container, away from light, heat and moisture. For the best experience, we suggest enjoying the coffee within one month of the roast date.

Our coffees are typically at their peak from around 7 days off roast onwards. Grind immediately before brewing for the freshest and most expressive cup.

Roasted to order, in small batches, within metres of the farm that grew the beans. We roast and dispatch within two business days of your billing date.
